A Quick & Easy Gooseberry Pie

An easy to make Gooseberry Pie


One of our local growers came into the shop with some fabulous gooseberries which Carole made a delicious pie. It turns out it is also very easy to make, so we thought that we would share the recipe with you.

Ingredients:
30cm circle of shortcrust pastry
450g Punnet of Gooseberries
75g Sugar (golden caster is good)
1 beaten egg
2 tablespoons of Semolina
1 tablespoon of demerara sugar

Method:
Preheat the oven to 200°C, 180°C fan, Gas mark 6
Roll out a 30cm (12") circle of shortcrust pastry and place on greased baking tray
Brush the beaten egg onto the pastry leaving a 5cm (2") border
Sprinkle semolina over the eggwash (to absorb the fruit juices)
Pile the gooseberries on top the semolina and cover them with the caster sugar
Carefully fold over the edges on top of the fruit to hold it all in
Brush the pastry top with more beaten egg
Sprinkle the pastry with demerara sugar
Bake in the oven for roughly 35 minutes
Allow to cool slightly before serving with cream, creme fraiche or ice cream
