We are extremely proud of our Butchery, which offers locally reared, high quality meats from the Southill Estate and surrounding areas. All of our meat is expertly butchered to your exact requirements and in addition to the more traditional cuts; we have an extensive range of gourmet meals on offer.
Cardington Beef, Lamb and Chicken
Our rare-breed, grass-fed British White cattle are farmed and reared traditionally and ethically in small herds on the Estate. The beef is hung for the traditional 28 days allowing it to mature on the bone for a unique flavor and tenderness. We also offer local Simmental/Angus crossbreed beef from local Cardington farmer Jamie Murdoch.
Our lamb is mainly sourced locally from Estate tenant farms and there is always a full range of cuts available.
Jamie Murdoch also provides us with our free-range chickens, with ducks, turkeys and geese, coming from farms within a 10 mile radius of Cardington village.
We offer rare-breed pork from large Norfolk Black pigs that are absolutely delicious. We use traditional methods to make and hand link all our sausages including the ‘Olde Time Banger” and our unique Summerhill Traditional Pork Sausage. Because we make in small batches we could even make to your own recipe if you are willing to take 5 kilos at a time!
